Meats Recipes - Parma Ham and Mushroom Ribbons

Ingredients                        

  • 30 ml/2 tbsp olive oil

  • 100 g/4 oz/2 cups button mushrooms, sliced

  • 5 ml/1 tsp yeast extract

  • 100 g/4 oz Parma ham, cut into strips

  • 25 g/1 oz/2 tbsp butter

  • 75 ml/5 tbsp crème fraiche

  • Salt and freshly ground black pepper

  • 1.5 ml/1/4 tsp grated nutmeg

  • 350 g/12 oz any ribbon noodles

  • Grated Pecorino cheese


Method:

  1. Heat the oil in a small saucepan and add the mushrooms. Cook gently for 2 minutes until softened.

  2. Stir in the yeast extract, ham and the butter in small flakes. Heat gently, stirring until the butter melts.

  3. Stir in the crème fraiche, salt and pepper to taste and the nutmeg. Heat through for 2 minutes.

  4. Meanwhile, cook the noodles according to the packet directions. Drain and return to the saucepan.

  5. Add the ham mixture and toss well over a gentle heat. Pile on to warm plates and serve with the Pecorino cheese.
