Meats Recipes - Peasant-style Risotto

Ingredients                        

  • 30 ml/2 tbsp olive oil

  • 1 onion, finely chopped

  • 1 carrot, finely chopped

  • 1 celery stick, finely chopped

  • 1 salsiccia (sweet Italian sausage), cut into bite-sized pieces

  • 450 g/2 cups arborio or other risotto rice

  • 1.2 liters/2 pts/5 cups hot beef or chicken stock

  • 15 g/1/2 oz/1 tbsp unsalted (sweet) butter

  • 100 g/4 oz/1 cup grated Parmesan cheese


Method:

  1. Heat the oil in a large flameproof casserole (Dutch oven). Add the onion, carrot, celery and sausage and fry (sauté) for 2 minutes.

  2. Add the rice and cook, stirring for 1 minute. Add 250 ml/8 fl oz/1 cup of the stock.

  3. Simmer, stirring, until the liquid is absorbed. Repeat until the rice is just tender and creamy, about 15-20 minutes.

  4. Remove from the heat and stir in the butter and cheese. Serve straight away.
