Peperami Carbonara
Ingredients

350 g/12 oz spaghetti
-
1 onion, chopped
-
60 ml/4 tbsp olive oil
-
1 garlic clove,
crushed
-
2 peperami sticks,
chopped
-
Salt and freshly ground black pepper
-
30 ml/2 tbsp chopped
parsley
-
2 eggs
-
30 ml/2 tbsp milk
-
Grated Parmesan cheese
Method:
-
Cook
the
spaghetti according to the packet directions. Drain and
return to the pan.

Meanwhile, fry (sauté) the onion
in the oil for 1 minute. Add the garlic, peperami, a
little salt and pepper and the parsley.

Cover with a
lid and cook gently for 5 minutes. Add to the pasta
and toss well.

Beat the eggs with the milk. Add to
the pan and stir over a gentle heat until creamy and
lightly scrambled.
-
Spoon on to serving plates and
top with lots of grated Parmesan cheese.
