Meats Recipes - Peperami Carbonara

Ingredients                                        

  • 350 g/12 oz spaghetti

  • 1 onion, chopped

  • 60 ml/4 tbsp olive oil

  • 1 garlic clove, crushed

  • 2 peperami sticks, chopped

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp chopped parsley

  • 2 eggs

  • 30 ml/2 tbsp milk

  • Grated Parmesan cheese


Method:

  1. Cook the spaghetti according to the packet directions. Drain and return to the pan.

  2. Meanwhile, fry (sauté) the onion in the oil for 1 minute. Add the garlic, peperami, a little salt and pepper and the parsley.

  3. Cover with a lid and cook gently for 5 minutes. Add to the pasta and toss well.

  4. Beat the eggs with the milk. Add to the pan and stir over a gentle heat until creamy and lightly scrambled.

  5. Spoon on to serving plates and top with lots of grated Parmesan cheese.
