Meats Recipes - Piquant Chicken Liver Farfalle

Ingredients                                        

  • 225 g/8 oz/2 cups farfalle

  • 2 onions, finely chopped

  • 25 g/1 oz/2 tbsp butter

  • 15 ml/1 tbsp olive oil

  • 1 wineglass red vermouth

  • 450 g/1 lb/4 cups chicken livers, trimmed and chopped

  • 5 ml/1 tsp chopped sage

  • Salt and freshly ground black pepper

  • Chopped parsley


Method:

  1. Cook the pasta according to the packet directions, drain and return to the saucepan.

  2. Meanwhile, fry (sauté) the onions in the butter and oil until soft but not brown.

  3. Add the vermouth and simmer until reduced by half. Add the chicken livers and sage and cook quickly for about 2­3 minutes until brown but not dry.

  4. Season to taste. Add to the farfalle, toss well and sprinkle with the parsley before serving.
