Meats Recipes - Quick Saveloy Pilat

Ingredients                        

  • 225 g/8 oz/1 cup basmati rice

  • 225 g/8 oz/2 cups frozen diced mixed vegetables

  • 25 g/1 oz/2 tbsp butter

  • 2 onions, finely chopped

  • 10 ml/2 tsp paprika

  • 2.5 ml/1/2 tsp dried thyme

  • 350 g/12 oz saveloys, sliced

  • Salt and freshly ground black pepper


Method:

  1. Cook the rice in plenty of boiling lightly salted water for to minutes.

  2. Add the vegetables for the last 5 minutes of cooking time. Drain, rinse with boiling water and drain again.

  3. Meanwhile, melt the butter in a large frying pan (skillet). Add the onion and fry (sauté), stirring, for about 4 minutes until lightly golden.

  4. Stir in the paprika, thyme and saveloys. Heat through for 2 minutes, stirring.

  5. Add the rice and vegetable mixture, season to taste and cook, stirring until piping hot.
