Rigatoni with Sweet Smoked Ham and Sage
Ingredients

350 g/12 oz/3 cups
rigatoni
-
60 ml/4 tbsp olive oil
-
1 onion, finely
chopped
-
2 garlic cloves,
crushed
-
450 g/1 lb/4 cups sweet
cured smoked ham, diced
-
2 x 400 g/2 x 14
oz/2 large cans chopped tomatoes
-
30 ml/2 tbsp chopped
sage
-
10 ml/2 tsp clear honey
-
Salt and freshly ground
black pepper
-
50 g/2 oz Bavarian
smoked cheese, grated
Method:
-
Cook
the rigatoni
according to the packet directions. Drain.
-
Meanwhile, heat the oil and fry (sauté) the onion
and garlic for about 3 minutes until soft but not
brown.

Add the ham, tomatoes, sage, honey and a
little salt and pepper and simmer, stirring
occasionally, for 15 minutes.

Add to the rigatoni,
toss well and pile on to serving plates. Top with
the cheese.
