Recipes - Risotto con Salsiccia
Ingredients

30 ml/2 tbsp olive oil

25 g/1 oz/2 tbsp
unsalted (sweet) butter

1 small onion, finely
chopped

350 g/12 oz salsiccia
(sweet Italian sausage), cut into bite-sized pieces

450 g/1lb/2 cups arborio or other risotto rice
-
1.2
liters/2 pts/5 cups hot beef stock

Salt and freshly
ground black pepper
Method:

Heat the oil and
butter in a flameproof casserole (Dutch oven) and
fry (sauté) the onion and sausage for 3 minutes,
stirring.

Stir in the rice and cook for 1 minute.
Add 250 ml/8 fl oz/1 cup of the stock and simmer,
stirring, until it is absorbed.

Repeat until the
rice is just tender, about 15-20 minutes. Season to
taste and serve very hot.
