Meats Recipes - Risotto con Salsiccia

Ingredients                        

  • 30 ml/2 tbsp olive oil

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 1 small onion, finely chopped

  • 350 g/12 oz salsiccia (sweet Italian sausage), cut into bite-sized pieces

  • 450 g/1lb/2 cups arborio or other risotto rice

  • 1.2 liters/2 pts/5 cups hot beef stock

  • Salt and freshly ground black pepper


Method:

  1. Heat the oil and butter in a flameproof casserole (Dutch oven) and fry (sauté) the onion and sausage for 3 minutes, stirring.

  2. Stir in the rice and cook for 1 minute. Add 250 ml/8 fl oz/1 cup of the stock and simmer, stirring, until it is absorbed.

  3. Repeat until the rice is just tender, about 15-20 minutes. Season to taste and serve very hot.
