Meats Recipes - Salzburg Noodles

Ingredients                    

  • 1.5 kg/3 lb potatoes, cut into chunks

  • 200 g/7 oz/1 3/4 cups plain (all-purpose) flour

  • 50 g/2 oz/1/4 cup butter

  • 100 g/4 oz streaky bacon rashers (slices), finely diced


Method:

  1. Boil the potatoes in salted water until tender. Drain and mash well. Beat in the flour to form a dough.

  2. Roll out on a lightly floured surface and cut into narrow fingers. Grease a baking tin (pan) liberally with 15 g/1 tbsp of the butter.

  3. Lay the strips in the pan and sprinkle with the bacon. Melt the remaining butter and drizzle over.

  4. Bake in the oven at 190°C/375°F/gas mark 5 for about 20 minutes until the bacon is sizzling. Serve straight from the tin.
