Recipes - Shady Afternoon Spaghetti
Ingredients

450 g/1lb spaghetti
-
250 ml/8 fl oz/1 cup
olive oil
-
450 g/1lb back bacon,
rinded and diced
-
2 garlic cloves,
chopped
-
175 g/6 oz/1 cup
stoned (pitted) green olives, chopped
-
50 g/2 oz/1 cup button
mushrooms, chopped
-
25 g/1/4 cup
chopped parsley
-
5 ml/1 tsp dried
oregano
-
Salt and freshly
ground black pepper
Method:
-
Cook the spaghetti according to the packet directions. Drain and return
to the pan.

Heat the oil and fry (sauté) the bacon
and garlic for 3 minutes, stirring.

Add the olives and mushrooms
and
cook
for a further
2 minutes. Stir in the parsley and oregano.
-
Pour
over the spaghetti, toss and season to taste. Pile
on to serving plates and serve straight away.
