Meats Recipes - Shady Afternoon Spaghetti

Ingredients                                        

  • 450 g/1lb spaghetti

  • 250 ml/8 fl oz/1 cup olive oil

  • 450 g/1lb back bacon, rinded and diced

  • 2 garlic cloves, chopped

  • 175 g/6 oz/1 cup stoned (pitted) green olives, chopped

  • 50 g/2 oz/1 cup button mushrooms, chopped

  • 25 g/1/4 cup chopped parsley

  • 5 ml/1 tsp dried oregano

  • Salt and freshly ground black pepper


Method:

  1. Cook the spaghetti according to the packet directions. Drain and return to the pan.

  2. Heat the oil and fry (sauté) the bacon and garlic for 3 minutes, stirring.

  3. Add the olives and mushrooms and cook for a further 2 minutes. Stir in the parsley and oregano.

  4. Pour over the spaghetti, toss and season to taste. Pile on to serving plates and serve straight away.
