Meats Recipes - Sherried Chicken and Ham Spaghetti

Ingredients                                        

  • 50 g/2 oz/1/4 cup butter

  • 40 g/1/3 cup plain (all-purpose) flour

  • 300 ml/1 1/4 cups chicken stock

  • 300 ml/1 1/4 cups single (light) cream

  • 30 ml/2 tbsp medium dry sherry

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1/2 cup cooked peas

  • 100 g/4 oz/1 cup cooked ham, diced

  • 225 g/8 oz/2 cups cooked chicken, diced

  • 350 g/12 oz spaghettini

  • Grated Parmesan cheese


Method:

  1. Melt the butter in a saucepan. Add the flour and cook for 2 minutes. Remove from the heat and blend in the stock, cream and sherry.

  2. Bring to the boil and simmer for 2 minutes. Season to taste and add the peas, ham and chicken and cook gently for 5 minutes.

  3. Meanwhile, cook the spaghettini according to the packet directions. Drain, rinse with boiling water, drain again.

  4. Pile on to a serving dish, spoon the hot sauce over and sprinkle with Parmesan cheese.
