Meats Recipes - Simple Beef and Vegetable Rice-pot

Ingredients

  • 30 ml/2 tbsp sunflower oil

  • 225 g/8 oz/1 cup long-grain rice

  • 450 g/1 lb/4 cups minced (ground) beef

  • 1 onion, finely chopped

  • 2 carrots, diced

  • 100 g/4 oz green beans, cut into short lengths

  • 200 g/7 oz/1 small can pimientos, chopped

  • 100 g/4 oz/2 cups button mushrooms, sliced

  • 1 packet country vegetable soup mix

  • 900 ml/1 1/2/3 3/4 cups water

  • 5 ml/1 tsp yeast extract

  • Grated Cheddar cheese


Method:

  1. Heat the oil in a large saucepan. Add the rice and cook for 1 minute.

  2. Add the beef, onion and carrots and fry (sauté), stirring until the grains of meat are brown and separate. Stir in the remaining ingredients except the cheese.

  3. Bring to the boil, reduce the heat, cover and simmer gently for 15­20 minutes until the rice is tender and has absorbed all the liquid. Sprinkle with the cheese and serve hot.
