Meats Recipes - Spaghetti with Turkey and Mushrooms

Ingredients                                        

  • 60 ml/4 tbsp olive oil

  • 175 g/6 oz/1 1/2 cups diced turkey meat

  • 1 carrot, finely chopped

  • 1 celery stick, finely chopped

  • 1 garlic clove, crushed

  • 100 g/4 oz mushrooms, sliced

  • 4 tomatoes, chopped

  • 50 g/2 oz/2 cup frozen peas

  • 350 g/12 oz spaghetti

  • Salt and freshly ground black pepper

  • Grated Parmesan cheese


Method:

  1. Heat the oil in a large pan. Add all the ingredients except the spaghetti, seasoning and cheese and fry (sauté), stirring, for 3 minutes.

  2. Reduce the heat, cover and cook gently for 10 minutes, stirring occasionally.

  3. Meanwhile, cook the spaghetti according to the packet directions. Drain and add to the turkey mixture.

  4. Season to taste. Toss lightly and serve hot with the Parmesan cheese.
