Recipes - Spicy Beef Roll
Ingredients

750g/1 1/2 lb/6 cups minced
(ground) beef

75g/3 oz/3/4 cup cooked
long-grain rice

15ml/1 tbsp plain (all-purpose)
flour
-
2.5ml/1/2 tsp chili powder
-
5 ml/1 tsp dry mustard
-
1 onion, grated
-
30ml/2 tbsp chopped coriander
-
salt and freshly ground black
pepper
-
2 eggs, beaten
-
butter for greasing
-
50g/2 oz/1 cup breadcrumbs
-
100g/4oz Cheddar cheese, grated
Method:

Mix the beef with the rice,
flour, chili, mustard, onion, half the coriander and
a little salt and pepper.

Mix with enough egg to bind.
Butter a large square of foil, covering a baking
sheet.

Dust liberally with the
breadcrumbs. Press the meat out on the foil to a
square about 1cm/1/2 in thick. Chill for 30 minutes.

Sprinkle the cheese over, then
roll up, using the foil to help. Carefully wrap the
roll in the foil, sealing the ends.

Bake in the oven on the baking
sheet for q hour at 180°C/350°F/gas
mark 4.

Cool for 5 minutes, then cut
into thick slices and sprinkle with the remaining
coriander to garnish.
