Meats Recipes - Steak and Broccoli Stir-fry with Soy Noodles

Ingredients                        

  • 225 g/8 oz rump steak, cut into thin strips

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp light brown sugar

  • 5 ml/1 tsp sherry vinegar

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 225 g/8 oz any short ribbon noodles

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 1 small green (bell) pepper, cut into thin strips

  • 225 g/8 oz broccoli, cut into tiny florets

  • 4 spring onions (scallions), cut into diagonal slices

  • 100 g/4 oz/2 cups button mushrooms, sliced

  • 45 ml/3 tbsp soy sauce


Method:

  1. Put the steak in a shallow dish. Add half the salt, the sugar, sherry vinegar and corn flour, toss and leave to stand for 30 minutes.

  2. Cook the noodles according to the packet directions. Drain and return to the saucepan.

  3. Meanwhile, heat half the oil in a large frying pan (skillet) or wok. Add the pepper and broccoli and stir-fry for 5 minutes. Remove from the pan with a draining spoon.

  4. Heat the remaining oil and stir-fry the steak and marinade for 1 minute. Add the spring onions and mushrooms and continue frying for 1 minute.

  5. Return the broccoli to the pan, add half the soy sauce and the remaining salt and toss well.

  6. Add the remaining soy sauce to the noodles, toss and pile into bowls. Top with the stir-fry and serve straight away.
