Meats Recipes - Stir-fried Chicken with Angel Hair

Ingredients                                        

  • 45 ml/3 tbsp sunflower oil

  • 1 garlic clove, crushed

  • 1 bunch of spring onions (scallions), cut into diagonal slices

  • 1 green (bell) pepper, cut into thin strips

  • 50 g/2 oz/1 cup button mushrooms, sliced

  • 1 courgette (zucchini), cut into matchsticks

  • 225 g/8 oz/2 cups cooked chicken, shredded

  • 30 ml/2 tbsp soy sauce

  • 225 g/8 oz capellini

  • 15 g/1 tbsp unsalted (sweet) butter

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1/2 cup toasted flaked almonds


Method:

  1. Heat the oil in a large frying pan or wok. Add the garlic, spring onions and pepper and stir-fry for 3 minutes.

  2. Add the mushrooms and courgette and stir-fry for a further 2 minutes. Add the chicken and soy sauce and toss gently for 3 minutes.

  3. Meanwhile, cook the pasta according to the packet directions. Drain and add to the pan with the butter.

  4. Toss and stir until well combined. Taste and season if necessary.

  5. Pile into warm bowls and sprinkle with the almonds before serving.
