Meats Recipes - Tortellini alla Rustica

Ingredients

  • 450 g/1lb meat-filled tortellini

  • 1 onion, finely chopped

  • 1 garlic clove, crushed

  • 30 ml/2 tbsp olive oil

  • 400 g/14 oz/1large can chopped tomatoes

  • 15 ml/1 tbsp tomato puree (paste)

  • Salt and freshly ground black pepper

  • 2.5 ml/1/2 tsp dried oregano

  • 1 quantity cheese sauce

  • 50 g/2 oz/1/2 cup grated Pecorino cheese


Method:

  1. Cook the tortellini according to the packet directions and drain.

  2. Meanwhile, fry (sauté) the onion and garlic in the oil for 2 minutes. Add the tomatoes, tomato puree, a little salt and pepper and the oregano.

  3. Bring to the boil, reduce the heat and simmer for 6-8 minutes until pulpy. Stir in the cooked pasta. Turn into a flameproof dish.

  4. Spoon the cheese sauce over and top with the Pecorino. Place under a hot grill (broiler) to brown. Serve straight away.
