Tortellini alla Rustica
Ingredients

450 g/1lb meat-filled
tortellini
-
1
onion,
finely chopped
-
1 garlic clove,
crushed
-
30 ml/2 tbsp olive oil
-
400 g/14 oz/1large can
chopped tomatoes
-
15 ml/1 tbsp tomato
puree (paste)
-
Salt and freshly ground black pepper
-
2.5 ml/1/2 tsp dried
oregano
-
1 quantity cheese
sauce
-
50 g/2 oz/1/2 cup
grated Pecorino
cheese
Method:
-
Cook the tortellini
according to the packet directions and drain.

Meanwhile, fry (sauté) the onion and garlic in the
oil for 2 minutes. Add the tomatoes, tomato puree, a
little salt and pepper and the oregano.

Bring to the
boil, reduce the heat and simmer for 6-8 minutes
until pulpy. Stir in the cooked pasta. Turn into a
flameproof dish.

Spoon the cheese sauce over and top
with the Pecorino. Place under a hot grill
(broiler) to brown. Serve straight away.
