Meats Recipes - Turkey Chop Suey with Spicy Noodles

Ingredients                                                              

  • 350 g/12 oz/3 cups cooked turkey, diced

  • 298 g/1 can condensed cream of mushroom soup

  • 45 ml/3 tbsp soy sauce

  • 5 ml/1 tsp grated fresh root ginger

  • Salt and freshly ground black pepper

  • 1 garlic clove, crushed

  • 30 ml/2 tbsp sunflower oil

  • 1 carrot, grated

  • 1 green (bell) pepper, chopped

  • 2 celery sticks, chopped

  • 5 cm/2 in piece cucumber, grated

  • 100 g/4 oz mushrooms, sliced

  • 10 ml/2 tsp corn flour (cornstarch)

  • 30 ml/2 tbsp dry sherry

  • 225 g/8 oz/2 cups bean sprouts

  • 250 g/9 oz/1 packet Chinese egg noodles

  • 5 ml/1 tsp Chinese five-spice powder

  • A pinch of grated nutmeg


Method:

  1. Mix the turkey with the soup, soy sauce, ginger, a little salt and pepper and the garlic.

  2. Heat the oil in a large frying pan (skillet) or wok. Add the carrot, pepper, celery, cucumber and mushrooms and stir-fry for 1 minute.

  3. Stir in the turkey mixture and bring to the boil. Blend the corn flour with the sherry and stir into the pan. Add the bean sprouts and cook, stirring, for 5 minutes.

  4. Meanwhile, cook the noodles according to the packet directions. Drain and add the Chinese five-spice powder and nutmeg.

  5. Toss well, pile into bowls and top with the turkey mixture.
