Meats Recipes - Turkey Olivetto

Ingredients                                                              

  • 30 ml/2 tbsp olive oil

  • 1 green (bell) pepper, chopped

  • 1 red (bell) pepper, chopped

  • 1 onion, chopped

  • 1 garlic clove, chopped

  • 450 g/1lb/4 cups minced (ground) turkey

  • 2 x 400 g/2 x 14 oz/2 large cans chopped tomatoes

  • 100 g/4 oz/2/3 cup stoned (pitted) black olives, sliced

  • 30 ml/3 tbsp tomato puree (paste)

  • 10 ml/2 tsp caster (superfine) sugar

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp chopped basil

  • 350 g/12 oz spaghetti flavored with olives


Method:

  1. Heat the oil and fry (sauté) the peppers, onion and garlic for 3 minutes. Add the turkey and fry, stirring until all the grains of meat are separate.

  2. Add the tomatoes, olives, tomato puree, sugar and a little salt and pepper and simmer, stirring occasionally, for 20 minutes.

  3. Stir in half the basil. Meanwhile, cook the spaghetti according to the packet directions. Drain.

  4. Pile on to serving plates. Spoon the sauce over and garnish with the remaining basil.
