Meats Recipes - Washday Rice

Ingredients                                        

  • 350 g/12 oz/1 1/2 cups long-grain rice

  • 30 ml/2 tbsp olive oil

  • 4 eggs, beaten

  • 100 g/4 oz/1 cup cooked chicken, diced

  • 5 cm/2 in piece cucumber, chopped

  • 4 spring onions (scallions), chopped

  • 50 g/2 oz/1 cup mushrooms, sliced

  • 15 ml/1 tbsp soy sauce

  • Salt and freshly ground black pepper


Method:

  1. Cook the rice in plenty of boiling salted water until tender. Drain, rinse with cold water and drain again.

  2. Heat half the oil in a frying pan (skillet) and fry (sauté) half the egg until just beginning to set.

  3. Stir in the cooked rice, the chicken, cucumber, onions, mushrooms and soy sauce. Cook, stirring until piping hot. Season to taste.

  4. Meanwhile, in a separate small frying pan heat the remaining oil and make an omelets, using the remaining beaten egg seasoned with salt and pepper.

  5. Pile the rice mixture on to a warmed serving dish, slice the omelets and scatter on top.
