Recipes - West Country Pork-a-leekie
Ingredients

175 g/6 oz/3/4 cup
brown rice
-
450 g/1 lb pork fillet, cut into thin strips

15 ml/1 tbsp olive oil
-
4 leeks, sliced
-
1 garlic clove,
crushed
-
150 ml/2/3 cup
medium-sweet cider
-
Salt and freshly
ground black pepper

2 eating (dessert)
apples, sliced

25 g/1 oz/2 tbsp butter
-
150 ml/2/3 cup crème fraiche
Method:

Cook the rice according to the packet directions. Meanwhile, fry (sauté) the pork in the
oil for 3-4 minutes until lightly browned.

Add the
leeks and garlic, cover and cook gently for 5
minutes, stirring occasionally.

Add the cider and
some salt and pepper, bring to the boil, reduce the
heat, cover and simmer gently for 15 minutes.

Meanwhile fry the apple slices in the butter until
golden on both sides but still holding their shape.
Add to the drained rice and keep warm.

Stir the crème fraiche into the leek and pork. Heat through.
Make a nest of the rice and apple on 4 warm serving
plates.

Spoon the pork and leek mixture into the
centre and serve straight away.
