Meats Recipes - Wiltshire Penne

Ingredients                        

  • 350 g/12 oz/3 cups penne

  • 225 g/8 oz/2 cups cooked ham pieces

  • 2 onions, finely chopped

  • 100 g/4 oz/1/2 cup butter

  • Olive oil

  • 100 g/4 oz/1 cup frozen peas

  • 50 g/2 oz/1/2 cup grated Parmesan cheese

  • Salt and freshly ground black pepper


Method:

  1. Cook the penne in plenty of boiling, salted water according to the packet directions. Drain and return to the pan.

  2. Meanwhile, cut the ham into very small dice, discarding any fat or gristle.

  3. Fry (sauté) the onion gently in half the butter and 15 m/1 tbsp of oil until soft but not brown.

  4. Add the ham and peas, cover, reduce the heat and cook gently for 5 minutes, stirring occasionally.

  5. Add the remaining butter, the cheese, a very little salt and lots of pepper. Add to the cooked pasta and toss well over a gentle heat.

  6. Pile on to serving plates and drizzle a little extra olive oil over.
