Salad Recipes - Apple Harvest Salad

Ingredients

  • 225 g/8 oz/1 cup long-grain rice

  • 1 large green eating (dessert) apple, diced

  • Juice of 2 lemons

  • 6 pecan halves, roughly chopped

  • 100 g/4 oz Fontina cheese, diced

  • 175 g/6 oz/1 1/4 cups cooked ham, diced

  • 45 ml/3 tbsp olive oil

  • 15 ml/1 tbsp Worcestershire sauce

  • Salt and freshly ground black pepper


Method:

  1. Cook the rice in plenty of boiling salted water until just tender. Drain, rinse with cold water and drain again.

  2. Place in a large salad bowl. Toss the apple in a little of the lemon juice to prevent browning.

  3. Add to the rice with the nuts, cheese and ham and toss gently.

  4. Whisk the olive oil, the remaining lemon juice and the Worcestershire sauce together with a little salt and pepper and pour over the salad.

  5. Toss gently until completely coated then serve.
