Salad Recipes - Beetroot Layer

Ingredients

  • 4 cooked beetroot (red beet), sliced

  • 1 bunch of spring onions (scallions), chopped

  • 100 g/4 oz/1 cup cooked long-grain rice

  • 30 ml/2 tbsp gherkins (cornichons), sliced

  • 50 g/2 oz/1/2 cup walnuts, chopped

  • 45 ml/3 tbsp French dressing (or 2 parts oil to 1 part vinegar and a little salt, pepper and sugar)


Method:

  1. Layer the beetroot, onions, rice, gherkins and walnuts in a glass serving dish.

  2. Spoon the dressing over and chill for at least 30 minutes before serving.
