Recipes - Beetroot Layer
Ingredients

cooked beetroot (red beet), sliced

1 bunch of spring
onions (scallions), chopped

g/4 oz/1 cup cooked long-grain rice

ml/2 tbsp gherkins (cornichons), sliced

50
g/2 oz/1/2 cup walnuts, chopped

45 ml/3 tbsp French
dressing (or 2 parts
oil to 1
part vinegar and a little salt, pepper and sugar)
Method:
-
Layer the beetroot,
onions, rice, gherkins and walnuts in a glass
serving dish.
-
Spoon the dressing over and chill for
at least 30 minutes before serving.
