Ingredients

175 g/6 oz/1 1/2 cups
tortellini with cheese and spinach
-
400 g/14 oz/1 large can
frankfurters, drained and cut
into short lengths
-
1/2 bunch spring onions
(scallions), chopped
-
1 red eating (dessert)
apple,
-
unpeeled and diced
-
5 ml/1 tsp lemon juice
-
60 ml/4 tbsp
mayonnaise
-
60 ml/4 tbsp soured
(dairy sour) cream
-
Salt and freshly
ground black pepper
-
1/2 small white
cabbage, shredded
-
1 bunch of watercress, trimmed
-
30 ml/2
tbsp olive oil
-
10 ml/2 tsp white wine
vinegar
-
Caraway seeds
Method:
-
Cook the pasta
according to the packet directions. Drain, rinse
with cold water and drain again.

Place in a bowl
with the frankfurters, spring onion and apple,
tossed in the lemon juice.
-
Blend the mayonnaise with
the soured cream and a little salt and pepper. Pour
over the salad and toss gently.
-
Mix the cabbage with
the watercress sprigs, oil, vinegar and a little
salt and pepper. Toss well and pile on a serving
plate.

Spoon the frankfurter mixture on top and
sprinkle with a few caraway seeds.
