Salad Recipes - Berlin Beauty

Ingredients

  • 175 g/6 oz/1 1/2 cups tortellini with cheese and spinach

  • 400 g/14 oz/1 large can frankfurters, drained and cut into short lengths

  • 1/2 bunch spring onions (scallions), chopped

  • 1 red eating (dessert) apple,

  • unpeeled and diced

  • 5 ml/1 tsp lemon juice

  • 60 ml/4 tbsp mayonnaise

  • 60 ml/4 tbsp soured (dairy sour) cream

  • Salt and freshly ground black pepper

  • 1/2 small white cabbage, shredded

  • 1 bunch of watercress, trimmed

  • 30 ml/2 tbsp olive oil

  • 10 ml/2 tsp white wine vinegar

  • Caraway seeds


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Place in a bowl with the frankfurters, spring onion and apple, tossed in the lemon juice.

  3. Blend the mayonnaise with the soured cream and a little salt and pepper. Pour over the salad and toss gently.

  4. Mix the cabbage with the watercress sprigs, oil, vinegar and a little salt and pepper. Toss well and pile on a serving plate.

  5. Spoon the frankfurter mixture on top and sprinkle with a few caraway seeds.
