Salad Recipes - Caesar Salad with Pasta

Ingredients   

  • 100 g/4 oz/1 cup lumachi

  • 30 ml/2 tbsp garlic and herb cheese

  • 60 ml/4 tbsp olive oil

  • Lemon juice

  • 40 g/3 tbsp butter

  • 1 egg, beaten

  • 4 slices French bread, cubed

  • 1 garlic clove

  • 50 g/2 oz/1 small can anchovy fillets, chopped

  • 50 g/2 oz/1/2 cup grated Parmesan cheese

  • 1/2 cos (romaine) lettuce, torn into pieces


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again. Place in a salad bowl.

  2. Blend the garlic and herb cheese with the oil, a little at a time until smooth. Add lemon juice to taste.

  3. Melt a third of the butter in a small pan. Add the egg and scramble lightly but keep creamy.

  4. Remove from the heat and immediately plunge the base of the pan in cold water to prevent further cooking.

  5. Melt the remaining butter in a frying pan (skillet). Add the bread cubes and garlic and fry (sauté) until the bread is golden.

  6. Discard the garlic and drain the bread on kitchen paper. Add everything to the pasta and toss gently but thoroughly. Serve immediately.
