Salad Recipes - Chow Mien Salad

Ingredients

  • 100 g/4 oz/1 cup Chinese egg noodles

  • 100 g/4 oz mangetout (snow peas)

  • 175 g/6 oz/1 1/2 cups bean sprouts

  • 1 red (bell) pepper, sliced

  • 100 g/4 oz/2 cups button mushrooms, sliced

  • 1/2 bunch of spring onions (scallions), chopped

  • 100 g/4 oz/1 cup peeled prawns (shrimp)

  • 1 little gem lettuce, shredded

  • 45 ml/3 tbsp sunflower oil

  • 15 ml/1 tbsp sesame oil

  • 30 ml/2 tbsp lemon juice

  • 2.5 cm/1 in piece fresh root ginger, grated

  • 30 ml/2 tbsp sesame seeds


Method:

  1. Cook the noodles according to the packet directions. Drain, rinse with cold water, drain again and place in a bowl.

  2. Top and tail the mangetout and break in half. Place in the bowl with the bean sprouts, pepper, mushrooms, spring onions, prawns and lettuce.

  3. Whisk the remaining ingredients together and pour over the salad. Toss well and serve.
