Salad Recipes - Creamy Macaroni with Mushrooms

Ingredients                      

  • 225 g/8 oz/1 cup elbow macaroni

  • 350 g/12 oz/6 cups button mushrooms, sliced

  • 45 ml/3 tbsp lemon juice

  • 30 ml/2 tbsp olive oil

  • 1 garlic clove, crushed

  • 150 ml/2/3 cup thick plain yoghurt

  • 150 ml/2/3 cup mayonnaise

  • 15 ml/1 tbsp chopped chervil

  • A few fennel seeds


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Place in a bowl with the mushrooms. Whisk together the remaining ingredients except the fennel seeds and add to the salad.

  3. Toss well, sprinkle with fennel seeds and chill for at least 1 hour to allow the flavor to develop.
