Salad Recipes - Curried Chicken Pasta Salad

Ingredients

  • 225 g/8 oz/2 cups spiralli

  • 60 ml/4 tbsp mayonnaise

  • 30 ml/2 tbsp curried peach chutney

  • 2 dried peaches, chopped

  • 10 ml/2 tsp curry paste

  • 175 g/6 oz/1 1/2 cups chopped cooked chicken

  • Lettuce leaves

  • Lemon wedges


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Blend the mayonnaise in a bowl with the chutney, peaches and curry paste.

  3. Fold in the chicken and pasta and chill until ready to serve on a bed of lettuce, garnished with lemon wedges.
