Salad Recipes - Danish Salami Supper

Ingredients

  • 175 g/6 oz/1/2 cups lumachi

  • 1 green (bell) pepper, diced

  • 1 small onion, sliced and separated into rings

  • 200 g/7 oz/1 small can sweet corn (corn), drained

  • Salt and freshly ground black pepper

  • 60 ml/4 tbsp mayonnaise

  • 30 ml/2 tbsp soured (dairy sour) cream

  • 1 little gem lettuce

  • 100 g/4 oz pink Danish salami slices, halved


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Place in a bowl with the pepper, onion, corn, a little salt and a good grinding of pepper.

  3. Blend the mayonnaise with the soured cream and add to the bowl. Toss together, taste and re-season if necessary.

  4. Pile on to a bed of lettuce leaves. Fold the halved salami slices into cornet shapes and arrange all round the salad. Serve straight away.
