Salad Recipes - Date and Walnut Delight

Ingredients

  • 175 g/6 oz/1 1/2 cups ruote

  • 100 g/4 oz/2/3 cup fresh dates, stoned (pitted) and diced

  • 2 celery sticks, sliced

  • 1 carrot, grated

  • 1 red and 1 green eating (dessert) apple, chopped

  • Lemon juice

  • 50 g/2 oz/1/2 cup walnuts, coarsely chopped

  • 2 heads chicory (Belgian endive)

  • 150 ml/2/3 cup plain yoghurt

  • 15 ml/1 tbsp clear honey

  • Salt and freshly ground black pepper

  • 75 g/3 oz Feta cheese, crumbled


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Mix with the dates, celery and carrot. Toss the apples in lemon juice and add with the walnuts.

  3. Cut a cone-shaped core out of the bases of the chicory, then separate into leaves. Arrange on a serving plate.

  4. Blend the yoghurt with the honey, a little salt and pepper and lemon juice to taste.

  5. Pour over the salad and toss well. Pile on to the chicory and sprinkle the Feta cheese over.
