Economical Curried Rice and Cheese Salad
Ingredients

225 g/8 oz/1 cup
long-grain rice
-
400 g/14 oz/1 large can
baked beans in tomato sauce
-
10 ml/2 tsp curry
powder
-
15 ml/1 tbsp salad
cream
-
30 ml/2 tbsp sultanas ( golden raisins)
-
100 g/4 oz Cheddar
cheese, cubed
-
Lettuce leaves
-
Chopped parsley
Method:
-
Cook the rice in plenty of boiling salted water until tender. Drain,
rinse with cold water and drain again. Place in a
bowl.

Add the beans, curry powder, salad cream,
sultanas and cheese. Toss well.
-
Pile on a bed of
lettuce and serve garnished with parsley.
