Salad Recipes - Economical Curried Rice and Cheese Salad

Ingredients

  • 225 g/8 oz/1 cup long-grain rice

  • 400 g/14 oz/1 large can baked beans in tomato sauce

  • 10 ml/2 tsp curry powder

  • 15 ml/1 tbsp salad cream

  • 30 ml/2 tbsp sultanas ( golden raisins)

  • 100 g/4 oz Cheddar cheese, cubed

  • Lettuce leaves

  • Chopped parsley


Method:

  1. Cook the rice in plenty of boiling salted water until tender. Drain, rinse with cold water and drain again. Place in a bowl.

  2. Add the beans, curry powder, salad cream, sultanas and cheese. Toss well.

  3. Pile on a bed of lettuce and serve garnished with parsley.
