English Country Prawn Salad
Ingredients

g/12 oz/1 1/2 cups long-grain rice

g/8 oz/2 cups peeled prawns
(shrimp)

1
cucumber, thinly sliced
-

hard-boiled (hard-cooked) eggs,
sliced
-
2
tomatoes, halved, seeded and cut into
chunks
-
45
ml/3 tbsp olive oil
-
Juice
of 2
lemons
-
Salt
and freshly ground black
pepper
-
Lettuce leaves
Method:
-
Cook
the rice in
plenty of boiling salted water until tender. Drain,
rinse with cold water and drain again.

Place in a
large bowl and gently mix in all the remaining
ingredients except the lettuce.

Turn into a large,
lightly oiled pudding basin and press down firmly.
Chill for at least 1 hour.

Loosen the edge, then
turn out on to a bed of lettuce and serve.
-
Alternatively, simply toss gently in a salad bowl
and serve with the lettuce.
