Salad Recipes - English Country Prawn Salad

Ingredients

  • 350 g/12 oz/1 1/2 cups long-grain rice

  • 225 g/8 oz/2 cups peeled prawns (shrimp)

  • 1 cucumber, thinly sliced

  • 2 hard-boiled (hard-cooked) eggs, sliced

  • 2 tomatoes, halved, seeded and cut into chunks

  • 45 ml/3 tbsp olive oil

  • Juice of 2 lemons

  • Salt and freshly ground black pepper

  • Lettuce leaves


Method:

  1. Cook the rice in plenty of boiling salted water until tender. Drain, rinse with cold water and drain again.

  2. Place in a large bowl and gently mix in all the remaining ingredients except the lettuce.

  3. Turn into a large, lightly oiled pudding basin and press down firmly. Chill for at least 1 hour.

  4. Loosen the edge, then turn out on to a bed of lettuce and serve.

  5. Alternatively, simply toss gently in a salad bowl and serve with the lettuce.
