Salad Recipes - Herby Mixed Salad

Ingredients

  • 100 g/4 oz/1 cup zite or rigatoni

  • 50 g/2 oz/1 cup button mushrooms, sliced

  • 2 small courgettes (zucchini), sliced

  • 1 bunch of spring onions (scallions), sliced

  • 12 black olives

  • 45 ml/3 tbsp olive oil

  • 15 ml/1 tbsp tarragon vinegar

  • 15 ml/1 tbsp chopped tarragon

  • Salt and freshly ground black pepper

  • 1/2 curly endive (frisse lettuce)

  • 50 g/2 oz Feta cheese, crumbled


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Place in a bowl with the mushrooms, courgettes, spring onions and olives.

  3. Mix the oil, vinegar, tarragon and a little salt and pepper together. Pour over the salad and toss well.

  4. Pile on to a bed of curly endive and sprinkle the Feta cheese over.
