Ingredients

100 g/4 oz/1 cup zite
or rigatoni
-
50 g/2 oz/1 cup button mushrooms, sliced
-
2 small courgettes
(zucchini), sliced
-
1 bunch of spring onions (scallions), sliced
-
12 black olives
-
45 ml/3 tbsp olive oil
-
15 ml/1 tbsp tarragon
vinegar
-
15 ml/1 tbsp chopped
tarragon
-
Salt and freshly ground black pepper
-
1/2 curly endive (frisse
lettuce)
-
50 g/2 oz Feta cheese,
crumbled
Method:
-
Cook the pasta
according to the packet directions. Drain, rinse
with cold water and drain again.
-
Place in a bowl
with the mushrooms, courgettes, spring onions and
olives.

Mix the oil, vinegar, tarragon and a little
salt and pepper together. Pour over the salad and
toss well.
-
Pile on to a bed of curly endive and
sprinkle the Feta cheese over.
