Salad Recipes - Hot Spaghetti with Summer Tomato Sauce

Ingredients

  • 3 garlic cloves, crushed

  • Grated rind and juice of 1 orange

  • 1 kg/2 1/14lb tomatoes, skinned, seeded and roughly chopped

  • 50 g/2 oz/1/2 cup torn basil leaves

  • 2.5 ml/1/2 tsp dried thyme

  • 1.5 ml/1/2 tsp cayenne

  • 25 g/1 oz/1/4 cup freshly grated Parmesan cheese

  • 90 ml/6 tbsp olive oil

  • Salt and freshly ground black pepper

  • 350 g/12 oz whole wheat spaghetti


Method:

  1. Mix all the ingredients except the pasta in a large bowl. Chill for several hours to allow the flavors to develop.

  2. When ready to serve, cook the spaghetti according to the packet directions. Drain, rinse with boiling water and drain again.

  3. Return to the saucepan. Add the cold sauce, toss well and serve straight away with a good grinding of black pepper on each serving.
