Salad Recipes - Lebanese-style Cucumber and Rice Salad

Ingredients

  • 225 g/8 oz/1 cup long-grain rice

  • 1 cucumber, grated

  • 150 ml/2/3 cup thick plain yoghurt

  • 10 ml/2 tsp dried mint

  • Salt and freshly ground black pepper


Method:

  1. Cook the rice in plenty of boiling salted water until just tender. Drain, rinse with cold water and drain again.

  2. Grate the cucumber and squeeze out the excess moisture. Add to the rice and mix thoroughly.

  3. Spoon on to a serving dish. Mix the yoghurt with the mint and season with salt and lots of black pepper.

  4. Spoon over the rice and cucumber and chill until ready to serve.
