Salad Recipes - Lemon Mushroom Salad

Ingredients

  • 175 g/6 oz/1 1/2 cups penne

  • 225 g/8 oz/4 cups small button mushrooms, halved

  • 30 ml/2 tbsp mayonnaise

  • 30 ml/2 tbsp thick plain yoghurt

  • Grated rind and juice of 1/2 lemon

  • 15 ml/1 tbsp chopped parsley

  • 100 g/4 oz young spinach leaves

  • Garlic croutons


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Place in a bowl with the mushrooms. Mix the mayonnaise with the yoghurt.

  3. Stir in the lemon rind and juice and half the parsley. Season to taste. Spoon over the pasta mixture and toss.

  4. Pile on to a bed of spinach leaves and garnish with garlic croutons and the remaining parsley.
