Lemon Mushroom Salad
Ingredients

175 g/6 oz/1 1/2
cups penne
-
225 g/8 oz/4
cups
small button
mushrooms, halved
-
30 ml/2 tbsp
mayonnaise
-
30 ml/2 tbsp thick
plain yoghurt
-
Grated rind and juice
of 1/2
lemon
-
15 ml/1 tbsp chopped parsley
-
100 g/4 oz
young spinach leaves
-
Garlic croutons
Method:
-
Cook the pasta according to the packet directions.
Drain, rinse with cold water and drain again.

Place
in a bowl with the mushrooms. Mix the mayonnaise
with the yoghurt.
-
Stir in the lemon rind and juice
and half the parsley. Season to taste. Spoon over
the pasta mixture and toss.

Pile on to a bed of
spinach leaves and garnish with garlic croutons and
the remaining parsley.
