Recipes - Mozzarella and Cherry Tomato Vinaigrette
Ingredients

225 g/8 oz/2 cups lumachi
-
225 g/8 oz Mozzarella cheese,
diced
-
350 g/12 oz/3 cups cherry
tomatoes, quartered
-
16 torn fresh basil leaves
-
120 ml/4 fl oz/1/2 cup olive
oil
-
30 ml/2 tbsp red wine vinegar
-
Freshly ground black pepper
-
Coarse sea salt
Method:
-
Cook the pasta according to
packet directions. Drain, rinse with cold water and
drain again.

Put all the ingredients,
including lots of black pepper in a bowl.
-
Toss lightly and chill for 30
minutes. Serve sprinkled with a little coarse sea
salt.
