Salad Recipes - Mozzarella and Cherry Tomato Vinaigrette

Ingredients

  • 225 g/8 oz/2 cups lumachi

  • 225 g/8 oz Mozzarella cheese, diced

  • 350 g/12 oz/3 cups cherry tomatoes, quartered

  • 16 torn fresh basil leaves

  • 120 ml/4 fl oz/1/2 cup olive oil

  • 30 ml/2 tbsp red wine vinegar

  • Freshly ground black pepper

  • Coarse sea salt


Method:

  1. Cook the pasta according to packet directions. Drain, rinse with cold water and drain again.

  2. Put all the ingredients, including lots of black pepper in a bowl.

  3. Toss lightly and chill for 30 minutes. Serve sprinkled with a little coarse sea salt.
