Recipes - Nutty Apricot Cooler
Ingredients

175 g/6 oz/1 1/2 cups

100 g/4 oz/2/3 cup
ready-to-eat dried apricots, quartered

50 g/2 oz/1/2 cup pine
nuts

12 stoned (pitted)
black olives, halved

1 cucumber, diced
-
150 ml/2/3 cup
soured (dairy sour) cream
-
Grated rind and juice
of 1 lime
-
15 ml/1 tbsp clear honey
-
Salt and freshly
ground black pepper
-
15 ml/1 tbsp snipped
chives
-
Curly endive (frisse lettuce) leaves
-
Cayenne
Method:
-
Blend the cream with the lime rind and juice, the
honey, a little salt and pepper and the chives.
-
Mix
well, then pour over the salad and toss well. Chill
for at least 1 hour to allow the flavors to
develop.

Pile on to a bed of curly endive and
sprinkle with cayenne before serving.
