Salad Recipes - Nutty Apricot Cooler

Ingredients

  • 175 g/6 oz/1 1/2 cups ruote

  • 100 g/4 oz/2/3 cup ready-to-eat dried apricots, quartered

  • 50 g/2 oz/1/2 cup pine nuts

  • 12 stoned (pitted) black olives, halved

  • 1 cucumber, diced

  • 150 ml/2/3 cup soured (dairy sour) cream

  • Grated rind and juice of 1 lime

  • 15 ml/1 tbsp clear honey

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp snipped chives

  • Curly endive (frisse lettuce) leaves

  • Cayenne


Method:

  1. Blend the cream with the lime rind and juice, the honey, a little salt and pepper and the chives.

  2. Mix well, then pour over the salad and toss well. Chill for at least 1 hour to allow the flavors to develop.

  3. Pile on to a bed of curly endive and sprinkle with cayenne before serving.
