Oriental Green Bean and Peanut Salad
Ingredients

g/9 oz/1 packet soba or
Chinese egg noodles

g/8 oz/2 cups thin green beans, cut
into short lengths

90 ml/6 tbsp peanut butter
-
30 ml/2
tbsp caster (superfine) sugar

ml/2/3 cup dashi or vegetable stock

30
ml/2 tbsp soy sauce
Method:

Cook
the noodles according to the packet directions.
Drain, rinse with cold water and drain again.

Boil
the beans in salted water for 5 minutes until just
tender. Drain, rinse with cold water and drain
again.

Blend the peanut butter, sugar, stock and soy
sauce together in a bowl.

Add the beans and
noodles. Toss well and serve straight away.
