Salad Recipes - Oriental Green Bean and Peanut Salad

Ingredients

  • 250 g/9 oz/1 packet soba or Chinese egg noodles

  • 225 g/8 oz/2 cups thin green beans, cut into short lengths

  • 90 ml/6 tbsp peanut butter

  • 30 ml/2 tbsp caster (superfine) sugar

  • 150 ml/2/3 cup dashi or vegetable stock

  • 30 ml/2 tbsp soy sauce


Method:

  1. Cook the noodles according to the packet directions. Drain, rinse with cold water and drain again.

  2. Boil the beans in salted water for 5 minutes until just tender. Drain, rinse with cold water and drain again.

  3. Blend the peanut butter, sugar, stock and soy sauce together in a bowl.

  4. Add the beans and noodles. Toss well and serve straight away.
