Salad Recipes - Party Rice Salad

Ingredients

  • 275 g/10 oz/1 1/4 cups long-grain rice

  • 100 g/4 oz/1 cup frozen peas

  • 50 g/2 oz/1/2 cup sultanas (golden raisins)

  • 25 g/1 oz/1/4 cup toasted flaked almonds

  • 4 celery sticks, chopped

  • 45 ml/3 tbsp olive oil

  • 15 ml/1 tbsp white wine vinegar

  • A pinch of salt

  • A pinch of caster (superfine) sugar

  • 2.5 ml/1/2 tsp made English mustard

  • Freshly ground black pepper


Method:

  1. Cook the rice in plenty of boiling salted water for 10 minutes, adding the peas half­way through cooking.

  2. Drain, rinse with cold water and drain again. Mix with the sultanas, nuts and celery in a large salad bowl.

  3. Blend the remaining ingredients together with a good grinding of black pepper. Pour over the salad and toss well.
