Recipes - Party Rice Salad
Ingredients

275 g/10 oz/1 1/4 cups
long-grain rice
-
100 g/4 oz/1 cup frozen peas
-
50 g/2 oz/1/2 cup
sultanas (golden raisins)
-
25 g/1 oz/1/4 cup
toasted flaked almonds
-
4 celery sticks,
chopped
-
45 ml/3 tbsp olive oil
-
15 ml/1 tbsp white
wine vinegar
-
A pinch of salt
-
A pinch of caster
(superfine) sugar
-
2.5 ml/1/2 tsp made English
mustard
-
Freshly ground black pepper
Method:
-
Cook the rice in plenty of boiling salted water for
10 minutes, adding the peas halfway through
cooking.

Drain, rinse with cold water and drain
again. Mix with the sultanas, nuts and celery in a
large salad bowl.

Blend the remaining ingredients
together with a good grinding of black pepper. Pour
over the salad and toss well.
