Ingredients
-
225 g/8 oz/2 cups
rigatoni
-
225 g/8 oz/2 cups
French (green) beans, cut into short
lengths
-
2 hard-boiled
(hard-cooked) eggs, roughly chopped
-
1 small onion, sliced
into rings
-
4 tomatoes, roughly
diced
-
185 g/1 small
can tuna, drained
-
50 g/2 oz/1 small can
anchovies, drained and cut into
thin slivers
-
90 ml/6 tbsp olive oil
-
30 ml/2 tbsp red wine
vinegar
-
Salt and freshly ground black pepper
-
Cos (romaine) lettuce
leaves
-
A few black olives
Method:
-
Cook the pasta according to the packet directions. Add the beans for the
last 5 minutes. Drain, rinse with cold water and
drain again.
-
Place in a bowl with the remaining
ingredients except the lettuce and olives and season
lightly with salt and lots of black pepper.
-
Toss
very gently so as not to break up the tuna too much.

Pile on to a bed of lettuce and scatter a few black
olives over.
