Salad Recipes - Pasta Nicoise

Ingredients

  • 225 g/8 oz/2 cups rigatoni

  • 225 g/8 oz/2 cups French (green) beans, cut into short lengths

  • 2 hard-boiled (hard-cooked) eggs, roughly chopped

  • 1 small onion, sliced into rings

  • 4 tomatoes, roughly diced

  • 185 g/1 small can tuna, drained

  • 50 g/2 oz/1 small can anchovies, drained and cut into thin slivers

  • 90 ml/6 tbsp olive oil

  • 30 ml/2 tbsp red wine vinegar

  • Salt and freshly ground black pepper

  • Cos (romaine) lettuce leaves

  • A few black olives


Method:

  1. Cook the pasta according to the packet directions. Add the beans for the last 5 minutes. Drain, rinse with cold water and drain again.

  2. Place in a bowl with the remaining ingredients except the lettuce and olives and season lightly with salt and lots of black pepper.

  3. Toss very gently so as not to break up the tuna too much.

  4. Pile on to a bed of lettuce and scatter a few black olives over.
