Salad Recipes - Prawn Cocktail Pasta

Ingredients

  • 225 g/8 oz/2 cups short-cut macaroni

  • 150 ml/2/3 cup mayonnaise

  • 15 ml/1 tbsp tomato ketchup (catsup)

  • 15 ml/1 tbsp single (light) cream

  • 10 ml/2 tsp horseradish cream

  • A dash of Worcestershire sauce

  • 6 stuffed olives, chopped

  • 1 hard-boiled (hard-cooked) egg, chopped

  • 1 green (bell) pepper, chopped

  • 175 g/6 oz/1 1/2 cups peeled prawns (shrimp)

  • Shredded lettuce

  • Paprika

  • Lemon wedges


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Mix the mayonnaise with the tomato ketchup, cream and horseradish in a large bowl.

  3. Add all the remaining ingredients except the lettuce, paprika and lemon wedges and toss well but lightly. Chill until ready to serve.

  4. Pile on to a bed of lettuce and garnish with a little paprika and lemon wedges.
