Recipes - Roll-mop Rigatoni
Ingredients

175g/1 1/2 cups
rigatoni
-
4 roll-mops
-
1/4 cucumber,
diced
-
30ml/2 tbsp
mayonnaise
-
30ml/2 tbsp plain
yoghurt
-
15ml/1 tbsp
chopped dill (dill weed)
-
Salt and freshly
ground black pepper
-
Lettuce leaves
Method:
-
Cook the pasta
according to the packet directions. Drain, rinse
with cold water and drain again.

Cut the roll-mops
into thin slices, using a sharp knife. Place in a
bowl with the pasta and cucumber.

Mix the
mayonnaise, yoghurt and dill together with a little
salt and lots of pepper.
-
Add to the pasta
and roll-mops and toss gently. Pile on to a bed of
lettuce leaves to serve.
