Ingredients

225 g/8 oz/1 cup
long-grain rice
-
275 g/10 oz can diced
mixed vegetables, drained

Mayonnaise
-
Salt and freshly
ground black pepper
-
Lettuce leaves
Method:
-
Cook the rice in plenty of boiling salted water until just tender. Drain,
rinse with cold water and drain again.

Place in a
bowl and mix in the vegetables. Moisten with
mayonnaise and season to taste.

Pile on to a bed of
lettuce. Serve with cold meat.
