Salad Recipes - Russian Rice Salad

Ingredients

  • 225 g/8 oz/1 cup long-grain rice

  • 275 g/10 oz can diced mixed vegetables, drained

  • Mayonnaise

  • Salt and freshly ground black pepper

  • Lettuce leaves


Method:

  1. Cook the rice in plenty of boiling salted water until just tender. Drain, rinse with cold water and drain again.

  2. Place in a bowl and mix in the vegetables. Moisten with mayonnaise and season to taste.

  3. Pile on to a bed of lettuce. Serve with cold meat.
