Salad Recipes - Salami and Rice Salad with Spinach

Ingredients

  • 225 g/8 oz/1 cup long-grain rice

  • 50 g/2 oz salami, cut into small thin strips

  • 50 g/2 oz/1/2 cup fresh shelled peas

  • 30 ml/2 tbsp olive oil

  • 15 ml/1 tbsp white wine vinegar

  • Salt and freshly ground black pepper

  • 100 g/4 oz young spinach leaves


Method:

  1. Cook the rice according to the packet directions. Drain, rinse with cold water, drain again.

  2. Mix with the salami and peas. Whisk the oil, vinegar and a little salt and pepper together and pour over. Toss well.

  3. Pile on a bed of spinach leaves and chill, if time, before serving.
