Recipes - Salami and Rice Salad with Spinach
Ingredients

225 g/8 oz/1 cup long-grain
rice
-
50 g/2 oz salami, cut into
small thin strips
-
50 g/2 oz/1/2 cup fresh shelled
peas
-
30 ml/2 tbsp olive oil
-
15 ml/1 tbsp white wine vinegar
-
Salt and freshly ground black
pepper
-
100 g/4 oz young spinach leaves
Method:

Cook the rice according to the
packet directions. Drain, rinse with cold water,
drain again.

Mix with the salami and peas.
Whisk the oil, vinegar and a little salt and pepper
together and pour over. Toss well.

Pile on a bed of spinach leaves
and chill, if time, before serving.
