Recipes - Scandinavian Herring Munch
Ingredients

100 g/4 oz/1 cup
conchiglie
-
2 red eating (dessert)
apples, diced
-
Grated rind and juice of 1/2 lemon
-
225 g/8 oz cold new
potatoes, diced
-
50 g/2 oz/1/3 cup seedless (pitless) red grapes, halved
-
4 rollmop herrings,
sliced
-
150 ml/2/3 cup
thick plain yoghurt
-
Salt and freshly
ground black pepper
-
30 ml/2 tbsp snipped
chives
Method:
-
Cook the pasta according to the packet directions.
Drain, rinse with cold water and drain again.
-
Toss
the apples in the lemon juice and mix with the
potatoes, lemon rind, grapes and herrings.
-
Add the
yoghurt, a little salt and a good grinding of
pepper. Toss gently, then chill until ready to serve
garnished with snipped chives.
