Recipes - Spiced Lamb's Tongue and Apple Salad
Ingredients

100 g/4 oz/1/2 cup long-grain rice
-
1 small green (bell) pepper, diced
-
30 ml/2 tbsp sultanas
(golden
raisins)

1 red-skinned eating (dessert) apple,
diced but unpeeled
-
Lemon juice
-
75 ml/5 tbsp mayonnaise
-
10 ml/2 tsp curry paste
-
2.5 ml/1/2 tsp Dijon mustard
-
Mango chutney
-
8 slices pressed lamb's tongue
-
Watercress sprigs
Method:

Cook
the rice in plenty of
boiling
salted
water until tender. Drain, rinse with cold water and
drain again.

Place in a bowl and add the pepper and
sultanas. Mix the apple with a little lemon juice to
prevent browning and add to the bowl.

Blend the
mayonnaise with the curry paste and mustard. Add to
the rice mixture, toss and pile on a serving plate.

Spread a little mango chutney on each slice of
tongue. Roll up and arrange on top of the rice.

Chill, then garnish with sprigs of watercress
before serving.
