Salad Recipes - Spiced Lamb's Tongue and Apple Salad

Ingredients

  • 100 g/4 oz/1/2 cup long-grain rice

  • 1 small green (bell) pepper, diced

  • 30 ml/2 tbsp sultanas (golden raisins)

  • 1 red-skinned eating (dessert) apple, diced but unpeeled

  • Lemon juice

  • 75 ml/5 tbsp mayonnaise

  • 10 ml/2 tsp curry paste

  • 2.5 ml/1/2 tsp Dijon mustard

  • Mango chutney

  • 8 slices pressed lamb's tongue

  • Watercress sprigs


Method:

  1. Cook the rice in plenty of boiling salted water until tender. Drain, rinse with cold water and drain again.

  2. Place in a bowl and add the pepper and sultanas. Mix the apple with a little lemon juice to prevent browning and add to the bowl.

  3. Blend the mayonnaise with the curry paste and mustard. Add to the rice mixture, toss and pile on a serving plate.

  4. Spread a little mango chutney on each slice of tongue. Roll up and arrange on top of the rice.

  5. Chill, then garnish with sprigs of watercress before serving.
