Salad Recipes - Spinach and Walnut Dream

Ingredients

  • 175 g/6 oz/3/4 cup Thai fragrant rice

  • 1 large avocado, halved and stoned (pitted)

  • Lemon juice

  • 100 g/4 oz young spinach leaves, torn

  • 2 spring onions (scallions), finely chopped

  • 50 g/2 oz/1/2 cup walnuts, roughly chopped

  • 30 ml/2 tbsp walnut oil

  • 15 ml/1 tbsp olive oil

  • A pinch of caster (superfine) sugar

  • Salt and freshly ground black pepper

  • 50 g/2 oz Wensleydale cheese, cubed


Method:

  1. Cook the rice in plenty of boiling salted water until just tender. Drain, rinse with cold water and drain again.

  2. Peel the avocado, dice and toss in lemon juice to prevent browning. Place in a bowl with the spinach, rice, spring onions and walnuts.

  3. Whisk the oils with 15 ml/1 tbsp of lemon juice, the sugar and a little salt and pepper.

  4. Pour over the salad and toss gently. Pile into a serving bowl and scatter the cheese over.
