Recipes - Summer TV Supper
Ingredients

225 g/8 oz/2 cups ruote
-
4 tomatoes, chopped
-
1/4 cucumber, diced
-
175 g/6 oz Cheddar cheese,
cubed
-
350 g/12 oz/1large can
sweet corn (corn), drained
-
45 ml/3 tbsp olive oil
-
15 ml/1 tbsp lemon
juice
-
5 ml/1 tsp Dijon
mustard
-
Salt and freshly
ground black pepper
Method:
-
Cook the pasta
according to the packet directions. Drain, rinse
with cold water and drain again.

Put in a bowl and
add the tomatoes, cucumber, cheese and com. Mix
gently.

Whisk the remaining ingredients together and
pour over. Toss lightly. Serve in bowls.
