Salad Recipes - Sunny Tuna Salad

Ingredients

  • 175g/6 oz/1 1/2 cups conchiglie

  • 185 g/1 small can tuna in oil

  • 30 ml/2 tbsp chopped parsley

  • 200 g/7 oz/1 small can sweet corn (corn), drained

  • 30 ml/2 tbsp olive oil

  • 15 ml/1 tbsp lemon juice

  • 1/2 bunch of spring onion (scallions), chopped

  • Lettuce leaves


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Mix with the remaining ingredients except the lettuce. Toss gently and pile on to lettuce leaves for serving.
